Grilled Veggie Quesadilla

What a great Mediterranean twist on a Mexican dish. I have to admit, this is amazing. So yummy and super easy. My new go-to lunch or dinner. 

Grilled Veggie Quesadilla

Ingredients
  1. ½ a Red Bell Pepper, stem and seeds removed and sliced
  2. 10 Baby Bellas, Portobello mushrooms, thick sliced
  3. ½ Medium Onion, sliced
  4. 1 Medium Zucchini, sliced diagonally
  5. 1 Yellow Squash, sliced diagonally
  6. 1 Tsp. Olive Oil
  7. 4 Whole Wheat Tortillas
  8. 4 Tsp. Pesto Sauce
  9. 4 oz. Mozzarella
Instructions
  1. Heat a pan on medium high and added 1 tsp. of olive oil. You can brush the veggies with oil and grill them if you'd like. Grill the veggies until tender. I like mine a little brown with that awesome caramelization. Set aside the veggies. Over medium heat place a tortilla in the pan, brush with 1 tsp. pesto sauce and sprinkle one ounce of mozzarella on the tortilla. Add 1/4 of the veggies, fold and cook until cheese is melted. Cut in half and enjoy the veggie deliciousness!
